Almond Joy Cookies

i’ve never had an original almond joy candy. i’m weird, i know. so when i started playing around with these tastes and a friend told me they were the flavors for almond joy, i shrugged and said, “well, at least i have a name for the recipe now”.





ANYWAY, these are yummy, friend-verified. i recreated them to fine-tuned perfection during this time of collective pause that i’m writing this in during 2020, and i you probably already have lots of these ingredients on-hand in your pantry.

Ingredients (makes 12 cookies)

  • 1/2 C rolled oats

  • 1/2 C shredded/desiccated coconut

  • 1 C almond meal (make your own here) or sub almond flour

  • 1.5 C granulated monk fruit sweetener (this is the brand i like) or sweetener of choice

  • 1 t cinnamon

  • 1/2 C almond butter

  • 1/2 C vegan chocolate chips




Instructions

  1. preheat your oven to 350ºF.

  2. combine all dry ingredients, then add in the almond butter. add splashes of water if needed to form a thick, creamy batter.

  3. use a tablespoon cookie scoop to form 12 medium-sized cookies on your baking sheet. press down slightly on each to flatten.

  4. bake for 12 minutes, until lightly browned on top.

  5. remove from oven and let cool for at least an hour before eating. enjoy!
