Chocolate Peanut Butter Bliss Balls

decadent, dark chocolate bites topped with a sweet peanut butter icing drizzle.... ugh, so good. i made these for my yoga teacher training graduation party, actually, and they were all gone within minutes. if you need a good go-to for any get-together, these are a staple crowd-pleaser. 



Ingredients (makes 24 balls) For balls:

  • 1 C almond meal*

  • 1/2 C shredded coconut

  • 1/4 C ground flaxseed

  • 2 heaping T carob powder (you can also use cocoa/cacao)

  • 1/2 C coconut butter

  • 1/4 C maple syrup 

  • 1/4 C cacao nibs 

For peanut butter icing drizzle:

  • 2 T creamy peanut butter

  • 2 T coconut butter (melted if hard)

  • 1/4 C maple syrup

  • water to thin as necessary (i used ~2 T)

Instructions

  • blend all bliss ball ingredients together in a high-speed blender or food processor until a fine, doughy meal forms. scrape the sides as necessary to evenly distrubute. you don't want to process to the point of nut butter, but make sure there aren't large chunks. 

  • roll into roughly tablespoon-sized balls and place on a sheet of parchment. 

  • after all balls are rolled, blend your icing ingredients. add water as necessary little by little to ensure you do not thin out too much.

  • with a fork or spoon, drizzle over balls evenly. 

  • place in freezer to firm for at least 30 minutes before serving. thaw out for around five minutes to soften before eating for best results. 




* i used leftover pulp from almond meal. you can also buy this store-bought, or simply process almonds in the blender into a fine powder.
