Sweet Potato Breakfast Mousse

starch is proven to be one of the most highly satiating foods, so having potatoes for breakfast is a great way to hold you over until the one-o’clock stomach growls. sweet potatoes paired with a little almond butter and vanilla extract makes the most lusciously filling and decadent breakfast that you can easily prep ahead. ingredients (serves 1)

  • 1 medium sweet potato

  • 1 T almond butter

  • ½ C unsweetened almond milk

  • 1 T maple syrup

  • ½ t pumpkin pie spice (or just use cinnamon)

  • ½ t vanilla extract

  • toppings of choice: granola, warmed cranberries, pumpkin seeds

instructions

  • peel your sweet potato and chop into small cubes. steam until tender and mash. with a hand mixer or just a spoon, blend with all other ingredients until fluffy and combined.

  • serve with toppings and enjoy.
