ingredients
(serves 1)
1 medium sweet potato
1 T almond butter
½ C unsweetened almond milk
1 T maple syrup
½ t pumpkin pie spice (or just use cinnamon)
½ t vanilla extract
toppings of choice: granola, warmed cranberries, pumpkin seeds
instructions
peel your sweet potato and chop into small cubes. steam until tender and mash. with a hand mixer or just a spoon, blend with all other ingredients until fluffy and combined.
serve with toppings and enjoy.
